Millet is one of the most ancient cereals and is worth including in our diet thanks to its fiber and amino acid content. It has a rather wide range of applications.
When preparing the porridge, nothing is added or taken from the millet and thus all the values of natural millet will be included in the porridge as well. Therefore it is no longer merely a side dish, but rather a fully fledged cereal rich in fiber, vitamins and minerals!
Millet has a slightly greater fat content than other cereals and this makes it more prone to rancidity. It might be worth refrigerating. Therefore, it might be worth refrigerating the millet after use.
Use:
Mix with two parts hot water or non-dairy milk and let set for 5-10 minutes. It can be prepared as either a sweet or savory dish with added carob powder, cinnamon, fruits or vegetables.
It is also suitable for thickening dishes.
